I spread lightly with humous (I used lemon and coriander flavoured humous today but have also used pesto flavoured mayo as the spread too) I then scatter crispy salad,grated carrot, chopped mange tout & sweet peppers. I scatter on a few sweet corn kernels from a tin and a small handful of pine nuts. If i have any cheese I may grate a tiny scattering of strong cheddar in as well. I then use just drizzle of my fav salad dressing and wrap it all up to eat. I've never made it in advance and taken it to work but I don't see a reason why it wouldn't be just as good a few hours later. carbs protein & salad! I had two today for lunch, yummy!
