Ingredients: 1 cup lentils, sorted and rinsed 2 cups water 2 onions, finely chopped 3 carrots, grated 4 stalks celery, finely chopped 3/4 cup ketchup 3 Tbsp brown sugar 1 Tbsp cider vinegar 1 Tbsp yellow mustard sandwich rolls or buns, split and toasted Sort over lentils and combine with water in medium saucepan. Bring to a boil, then cover and simmer for 10 minutes. Place lentils in slow cooker with remaining ingredients, except vinegar, mustard, and sandwich rolls. Cover and cook for 10-12 hours or until lentils are nice and soft and mixture is thickened. Stir in vinegar and mustard just before serving. Make sandwiches using toasted buns.
