Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 My husband isn't too hung up on our new lifestyle yet, but he really enjoys this chili 1 package of Gimme Lean vegetarian burger--optional 1 can diced tomatoes with gree chilies 1 can stewed tomatoes 1 can mexican chili beans 1 can red kidney beans--drained and rinsed 1 green pepper--seeded and diced 1 red pepper--seeded and diced 1 sweet onion--diced 15-20 baby carrots diced, or 3 large carrots diced 2 small zucchini--peeled and diced 1 small can mushrooms--drained, or 1/2 cup sliced fresh 2 Tbsp chipolte chili powder 2 Tbsp regular chili powder 1 Tbsp paprika 1 Tbsp black pepper--fresh ground if possible 1 tsp sea salt 1 tsp sugar substitute Olive Oil Cooked brown rice Shredded cheese--can use vegan cheese Cook brown rice according to directions. Keep warm In a large pan, saute all vegetables in olive oil until tender. Add both cans of beans and tomatoes. Mix all spices together and add to pan.
