You can also stir in some left over rice or small cooked pasta at the end of cooking time. Donna Dandelion and Tofu Soup It's A Dandy Soup 6 cups vegetable broth 2 cups torn dandelion greens 1 onion, chopped 1-2 darlic cloves, minced 1/4 cup sliced carrot 1 tablespoon grated ginger root 6 large mushrooms, sliced 1 dozen fresh sugar snap peas 2/3 cup diced firm tofu (try flavored tofu in this recipe as a bonus) Green onion tops, chopped for garnish Bring broth to a simmer; add chopped dandelion greens, carrot, onion, garlic and ginger root. Simmer until carrots are tender; about 8 to 10 minutes. Add mushrooms and peas. Continue cooking until peas are slightly tender but still crisp. Stir in tofu. Season with salt. Serve with a sprinkle or green onion tops and good old rustic bread you tear apart. The seed is in bloom, will it meet an early doom or survive in a tranquil sea?
