Mae Jean Watercress, Watermelon and Heirloom Tomato Salad 2 cups red seedless watermelon, cubed 4 ozs. goat cheese or feta cheese (PURELY OPTIONAL) 1 1/2 lbs. heirloom tomatoes, cut to same size as watermelon ginger vinaigrette, recipe below 1 bunch watercress, trimmed and washed Ginger Vinaigrette: 1/2 cups lemon juice 2 tbsps. soy sauce or tamari 1 oz. fresh ginger, minced 1 cup extra virgin olive oil Vinaigrette: Combine lemon juice, ginger and soy sauce in blender. Puree. With machine on, slowly pour in oil. Strain before using. Toss watermelon, tomatoes and watercress with ginger vinaigrette. Garnish with crumbled goat cheese and fresh cracked pepper.
