I have been diligently researching and lookingup new recipes and trying things out that I can assimilate to with out it being too far off from my daily self. I like to dabble in the kitchen and love to watch the food network's Robin Miller. Her stuff is great everytime and is fast and easy! It isn't all vegetarian so I am looking everywhere to get new recipes. Which brought me to your fine group. I am hoping to get a lot out of the group and to learn a lot from being vegetarian. Here is a recipe I made a while ago, which is deliscious! I don't use too much of measuring so I'm " ball parking " the measurements. 2 tbs Brown Sugar 1Tbs Ketchup 1 1/2 tsp dry rub seasoning 1 tsp, minced garlic 1 cup frozen stir fry veggies 1 package firm Tofu - rinsed, drained, dried, & cubed or in strips In 1 tbsp canola or safflower oil, over medium-high heat, saute the tofu until golden brown. Careful not to burn. Add in the mixed veggies. Cook until water from veggies are cooked out and lower heat. Mix the brown sugar, ketchup, and dry rub seasoning,and garlic together until you get the desired BBQ taste you want. Once the BBQ sauce is to your liking, add it in to your tofu stir fry until nicely coated. let it saute until sauce is bubbly and take away from heat. Food is ready to serve. Deliscious!
