Guest guest Posted December 19, 2008 Report Share Posted December 19, 2008 Skillet Creamed Potatoes with Dill 8 new potatoes, about 1 1/2 pounds, peeled and diced 1/2 cup milk 1/2 cup boiling water salt to taste 1 tablespoons finely chopped parsley 1 tsp dillweed Put potatoes in a small skillet, add boiling water and sprinkle with salt. Cook covered 6 to 8 minutes. Uncover and continue cooking until water evaporates. Add milk and more salt if needed. Stir gently with fork over low heat until well blended and liquid has thickened slightly. Add parsley. Serve hot and sprinkle dill over top.
