Guest guest Posted December 3, 2008 Report Share Posted December 3, 2008 I thought I'd also share that I doctor up pancakes to make them more nutrient-dense for breakfast, too. I confess, I buy the " just add water " pancake mixes, but then I add at least one egg for protein (use less water), some flax meal, some wheat germ, and sometimes miniature organic semi-sweet chocolate chips. If you make these little, about the size of the top of a coffee mug, you can premake a bunch fast, wrap them in waxed paper, and either eat them cold in the mornings (like soft cookies) or heat them quick in the microwave and put a little natural sweetener (dark agave is my absolute favorite for pancakes) on them. You can also add oatmeal to them for extra fiber and nutrients without your kids being able to tell, especially if you use quick oats or run them through your blender, dry, for a few seconds to break them up first. And you can add the protein powder to these, too. Just mix it with milk, and mix that in instead of the water. These are yummy and replace those expensive 'breakfast cookies' which are an awful way to start your day, since they are all carb and almost no protein. :-) Satina " And the day came when the risk to remain tight in a bud was more painful than the risk it took to blossom.
