Dijon mustard 1/2 tsp. sugar 1 to 1 1/4 tsps. salt 1/4 cup cream, heavy or half and half 1/2 cup fresh parsley, packed 1/2 cup olive oil Peel and pit avocado; mash enough to measure about one-half cup. Combine avocado with remaining ingredients in a food processor or blender and process until smooth. If too thick, thin with additional cream. Yields about 1 1/4 cups.
