_Spicy Sweet-Potato Unfries

_

Baked, not fried, this sweet/spicy appetizer or snack is a lower-fat,

nutrient-dense alternative to plain old French fries. NOTE: Recipe

originally

called for 1 Tbsp. curry and no cumin. If you like a heavy curry flavor,

try that; I'm more into South Indian food, so I tinker.

 

4 med. to lg. sweet potatoes, unpeeled

2 Tbsp. olive oil

1 tsp. sea salt [Ed.--or regular salt to taste, but sea salt does seem

to do something for vegetable flavors.]

1 tsp. white pepper

1 tsp. curry powder

1 tsp. cumin

1/2 to 1 tsp. cayenne, or to taste [serious chileheads, this would be a

very fine

place for some powdered habanero.]

 

1. Preheat oven to 375 degrees. Scrub sweet potatoes and cut in half. Cut

each half into 1/4 " strips. In a medium bowl, combine olive oil, spices

and salt.

Mix well.

 

2. Add sweet potato strips to olive oil mixture and stir with hands until

sweet potatoes are evenly coated. Spread on a cookie sheet and bake at 375

degrees until tender. Serve hot.

I made these last night,

didn't have any white pepper, so didn't use any,

 

and used a sweet potato and a regular potato,

both were very good and yummy.
