Guest guest Posted October 20, 2008 Report Share Posted October 20, 2008 Easy Pumpkin Muffins 1 15 oz can pumpkin 1 tbsp pumpkin pie spice (or your own list of spices for a 9 " pumkin pie) 1 yellow cake mix (no lard read label) Optional - 1 large egg -- it makes the batter easier to spoon into muffin cups, and the muffins look more attractive Mix with an electric mixer, fill muffin cups almost completely full, as these muffins are heavy and do not rise much.
