Breakfast Burrito any leftover rice for breakfast recipes?

My husband makes burritos.  Puts rice, salsa, egg and cheese in the tortilla.

My husband and I love rice of all types, but I am constantly making

more than we can eat at one dinner.

Any ideas for a good use of leftover rice for breakfast?

We are vegetarians (not vegans) so we can use eggs, cheese etc.
