Guest guest Posted October 16, 2008 Report Share Posted October 16, 2008 Southwestern Peach and Roasted Green Chile Salsa 2 medium poblano chiles, roasted, seeded and chopped 2 medium peaches, peeled, pitted and chopped 1 cup honey (doesn't taste good with maple syrup don't sub) 1 cup vegetable broth 2 tablespoons ancho chile powder 1 (or more) clove large garlic, crushed Combine poblanos, peaches, honey, broth, chile powder and garlic in a medium saucepan. Bring to a boil, reduce heat and simmer for 30 minutes, stirring occasionally, or until salsa reaches desired consistency. Cool and serve with meals or with tortilla chips Serves 8.
