I'm single as well, and my grocery bills are actually lower now than they were when I bought meat -- even with grocery cost increases. Dairy is definitely higher priced than it was a year ago. Beans and rice are a cheap, easy way to get good protein. One of my favorite meals lately is half a can of black beans (about $1 a can, and if you rinse them, less sodium) and about a cup of rice (I use instant, there's probably a more nutritious kind to use, I'm lazy and like instant!) in the microwave. Then I add 1/2 cup or so of prepared pico de gallo (some stores call it " fresh salsa, " but it's really pico) and a little shredded cheese and light sour cream (about a tablespoon of each). You can make your own pico with diced tomatoes, onions, cilantro, and jalapenos (I guess you could use canned chiles, I haven't tried that before). Organic soy milk is easily half the price of regular organic milk. I just look for whatever is on sale in the veggie aisle. So for a great soup I take potatoes, veggie bouillon, some garlic or leeks (finely chopped or sliced), and a green (kale, chard, spinach, whatever - diced). Cover with water, use a stick blender and then add a cup of soy milk. It's delicious and nutritious, and cheap. Freeze the leftovers in individual serving containers. Or roast eggplant, onions, garlic, tomatoes for about 45 min. Scrape out eggplant, squeeze out garlic, and the rest into a stock pot. Cover with water and add veggie bouillon. Cook for another 10, stick blend, and then add a cup of milk. This is why I don't post recipes so much as I am NEVER very good with amounts, etc. I just usually wing it. But soup is great, nutritious, and cheap. And it freezes well in single serves. I don't have it with bread as I am watching my weight but dh and daughter often have soup with a whole grain bread.
