The reason I like the meat substitutes is 1) I can make the recipes I grew up with -- farm food, comfort food, more or less -- meatless, and 2) some nights it's just easier to toss a prepared burger or frozen meal in the microwave than try to cook! I haven't figured out what to do with eggplant or tofu -- one of the reasons I'm on this list! I'd love to hear details on your eggplant sandwich and what else is good to do with these items. We used to use some of the Light Life (or is it Smart Life?) products, and we still do when we're visiting the US and have no cooking facilities. I do like their turkey slices, though. (And I never really liked turkey when I did eat meat.)
