I inderstand perfectly why a new vegetarian would want to think in terms

of meat substitutes and eat a lot of them. Hey, I go for the occasional

pack

of Smartdogs myself, and I do like the veggieburger at Burger King,

minus the mayo.

I bet you'd love my grilled

marinated-eggplant sandwiches, with or without the mozzarella and

grilled onions.) Any reasonably varied vegetarian diet provides

plenty of protein and enough vitamins and minerals, though a good

multivitamin and some calcium and D every day is a god idea, vegetarian

or not.)

 

" What sounds good tonight from the stuff I have on hand? " , I became a

much more interesting cook. And it actually got easier to plan meals,

not harder.

Meat substitutes are great for transitioning to vegetarian. The reason I

like the meat substitutes is 1) I can make the recipes I grew up

with -- farm food, comfort food, more or less -- meatless, and 2) some

nights it's just easier to toss a prepared burger or frozen meal in the

microwave than try to cook!

 

I haven't figured out what to do with eggplant or tofu -- one of the reasons

I'm on this list! I'd love to hear details on your eggplant sandwich and

what else is good to do with these items. :)

I have to agree. We used to use some of the Light Life (or is

it Smart Life?) products, and we still do when we're visiting the US

and have no cooking facilities.

I do like their turkey slices, though. (And I never really

liked turkey when I did eat meat.)
