Guest guest Posted September 21, 2008 Report Share Posted September 21, 2008 This is a quick lunch on weekends with a piece of garlic bread Mark Cottage Cheese Stuffed Tomato for 1 2 tbsps. celery, diced 1 tbsp. chives or green onions, snipped 1/2 cup cottage cheese pinch thyme 1 medium tomato parsley Combine first four ingredients. Turn tomato stem side down. Cut not quite through into six equal wedges. Spread open slightly and fill with the cottage cheese mixture and sprinkle with parsley. Serves 1.
