Guest guest Posted September 2, 2008 Report Share Posted September 2, 2008 Joan's Spinach Patties Made this for a vegetarian friend. When I brought them over to her house, she wolfed down three! One can serve with a side sauce, yoghurt or sour cream or eaten in a soft bun etc. Ingredients 1 bag of fresh spinach 1 small onion grated 1 garlic clove minced 1 large egg or 2 small or use egg replacer instead Buttery cracker crumbs, or cornmeal or matzoh meal seasoned salt to taste fresh chopped herbs optional such as basil, parsley etc. Optional variation: some raisins, plumped in wine and drained oil to fry Directions Wash spinach, drain and coarse chop Microwave 3 to 5 minutes to wilt Drain in colander and press out any excess liquid. Place in bowl and add onion, seasoning, egg or egg replacer , and enough crumbs to bind mixture. Shape into patties, you should get 5 or 6 Fry in some oil ( I used Basil Oil ) over medium high heat, golden on each side drain on toweling paper.
