Guest guest Posted September 1, 2008 Report Share Posted September 1, 2008 Mini Tofu Loaves 1 1/2 lbs. firm tofu, pat moisture, mashed with a fork 2 eggs, beaten 2 small onions, finely chopped 2 cups fresh breadcrumbs 2 tbsps. grated Parmesan or Romano cheese 2 tbsps. fresh parsley, finely chopped salt and pepper. to taste add some herbs if you like Preheat oven or toaster oven to temperature 350 degrees. Combine all ingredients in a bowl, mixing well. Spoon equally into a 6 cups muffin pan.
