Guest guest Posted August 12, 2008 Report Share Posted August 12, 2008 Mock Tuna Salad with Chickpeas 1 can chickpeas/garbanzo beans, drained 2 tbsp mayonnaise 2 tsp brown mustard 1 tbsp pickle relish 2 green onions, chopped 2 hard boiled eggs, chopped Put everything in the blender or food processor, chop or puree as you like. Sometimes needs a little salt. This is great in a pita, easy to take to work and none of that " fishy " smell! I never liked tuna, but it's a good sub for chicken salad, too. I'm sure veganaise would work as well (and no hard boiled eggs) for vegans. I just like the texture the eggs add, and the protein.
