I have vegetarian and vegan relatives plus a diabetic relative, a few with high cholesterol etc. plus the meat and potatoes eaters So when they all come for dinners or holidays, I do not mind serving 2 soups, 3 entrees, several sides dishes, and salads as well as desserts to please everyone. I love to do it and it's a challenge but. Of course I often have recipes than fit the bill and cover many dietary needs. I love the following recipe for black bean burgers because it is so simple and yet so delicious. I found out at a recent barbecue I gave, more requests for them than the beef ones! I often prepare and pan fry them, then freeze them. Then I simply thaw and reheat on a grill sprayed with cooking spray to prevent sticking. Title: Black Bean Burgers Yield: 6 servings 2, 15 oz can black beans 1/2 cup chunky salsa ( medium or hot for best flavor ) 1/4 cup yellow cornmeal 1/2 cup white or whole wheat flour 1 tsp cumin 1 clove garlic salt and pepper to taste optional : chopped fresh cilantro or parsley Delicious and they held together very nicely. A good alternative to have on hand for non meat eaters. Rinse and drain beans. Place in food processor and process until almost smooth. Add remainders and process well mixed Divide into 6 portions and make patties with your hands. Chill well. To prepare: heat some olive oil in skillet and cook until browned on both sides. Serves on buns with lettuce, tomatoes and onions. Also grills well, be sure to spray grill with Pam grilling oil to prevent burgers from sticking.
