I have been trying to adopt a more vegetarian- like diet It hasn't been easy, for one, I am trying to lower my sodium intake drastically, and secondly, I live in a border town, where the majority of people who live here aren't very health conscious, so my shopping choices are limited. One health food store, and it's inventory is quite paltry, and expensive! In the grocery stores, the pickin's are pretty slim here. And the farmer's markets are only in operation in the winter. Every 6 weeks or so, my husband and I head up to San Diego, where I try to stock up on dry goods, but as far as fresh foods go, I can't safely transport them the over-2-hours-trip home. And most processed foods are out of the question, as they usually are super-high in sodium. I also am looking for some really good and easy lunches I can take to work. Any thoughts? I can't eat many processed foods either because of food allergies. One thing I try to do is stock up on cheap seasonal stuff and keep extras frozen. I try to keep a supply of carrots, chopped up potatoes, onion, pepper, celery, etc. That helps a little during the times I can't get to the farm I like, and especially in the winter when there just isn't much available. I have a simple soup I make year-round with broth and whatever veggies and herbs I have at the time, and it helps to be able to just pull out some bags of veggies, throw them in the pot and have a pot of soup ready in an hour to last the week. I also will buy frozen veggies...those are better than canned. As for lunches, I'll take salads with beans added for protein. Or sometimes I'll just take cut up fruit and veggies and maybe some peanut butter or hummus. I am trying to cut back on eating a lot of pasta or bread, but you could take pasta salads or veggie sandwiches. I just try to eat as simple as possible.
