Yep, its a blue cheese that by international law can only be made in the English

counties of Derbyshire, Nottinghamshire and Leicestershire. One of the the

creameries is a few miles from where I live. That said I have seen stilton on

sale in specialist food shops in the USA. The soup would probably work well with

any strong blue cheese but each will give a different end result!
