Hi everyone!

I just joined and wanted to introduce myself. I have been trying to

move more towards eating vegetarian the last several years, despite

numerous food allergies and intolerances which seem to keep throwing

my whole way of eating out of whack. I think I have finally got myself

together and have started pushing harder at eating healthier in

general and eating less processed, bad for you foods. I have little

time to cook (currently working 2 jobs plus in school), so I need

recipes which require little prep, are easy to make, and even better

can be made ahead to heat up during the week.

Any ideas of how to start stocking my pantry with limited money would

be great. I always seem to spend too much money at the grocery store

with not enough to get through the week - I'm terrible at menu

planning. I tried organic gardening this year to help out, but our

soil is absolutely awful (weeds barely grow in it), and I'm convinced

I'll have to do more container gardening until it improves over the

years. I also tried our local farm coop, but there just wasn't enough

coming in to justify the cost (they're just starting out and aren't

quite organized yet). I know of a great farm to buy at, but it's 2

hours away, or else I'd be in produce heaven every week. I just need

to figure out how to get organized with what I can get and eat as

simple as possible. I'm looking forward to reading through the posts!
