Guest guest Posted July 16, 2008 Report Share Posted July 16, 2008 * Exported from MasterCook * Creamy Polenta with Parmesan - 4 pts, Carbs 28g, Fiber 4g Recipe By :The PDQ (Pretty Damn Quick) Vegetarian Cookbook by Donna Klein Serving Size : 6 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs LowFat (Less than 25%) Quick Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 ounces low sodium vegetable broth -- or 1 3/4 cups homemade 1 1/4 cups water 3/4 cup quick-cooking polenta 1 tablespoon extra virgin olive oil salt and freshly ground pepper to taste 3/4 cup already-shredded Parmesan cheese -- (3 ounces) In a medium stockpot, bring the broth and water to a boil over high heat, preferably on a back burner as the polenta sputters. Slowly add the polenta, stirring constantly with a long handled wooden spoon. Reduce the heat to medium and add the oil, salt, and pepper; cook, stirring constantly, until the mixture is the consistency of cream of wheat, about 5 minutes. Remove from the heat and immediately add the cheese, stirring until thoroughly combined. If serving as a first-course soup, ladle equal portions into soup bowls and serve at once. If serving as a side dish, let stand, uncovered, about 5 minutes, stirring occasionally, until mixture is the consistency of mashed potatoes. Transfer to a warm serving bowl and serve at once.
