Throw together diced raw potatoes, peppers, and onions, along with the burger crumbles. I toss mine with a bit of olive oil to coat, mix in chili powder, garlic, and cumin. I am generous with the seasonings but never measure. If you like more spicy food, add some Chulula sauce. I spray the foil with cooking spray then put about a cup or so in each packet. Keeping the packets small cuts the cooking time. I've done tofu with onion and mushrooms (all chopped pretty coarsely). I usually add garlic, black pepper, cumin, and turmeric.
