soy milk pudding? and sunchokes

I use unsweetened soy milk in all my recipes and even in mashed

potatoes but it sure doesn't set the pudding.

My sister makes a vegan chocolate pudding, I will try to get the recipe

from her.

 

I did freeze sunchokes in the past, it did change the texture and they

seemed to darken, if that doesn't bother you give it a try. I never

thought of this until now, I'll bet a little lemon juice would keep

them light.

To set pudding made with soymilk use 1-2 tsp of agar agar. This takes a little

while to set, but there is no need to boil or freeze anything. Agar agar will

set at room temp or in the fridge. It does not change the taste or texture, and

it is vegan.
