My sister makes a vegan chocolate pudding, I will try to get the recipe from her. I did freeze sunchokes in the past, it did change the texture and they seemed to darken, if that doesn't bother you give it a try. I never thought of this until now, I'll bet a little lemon juice would keep them light. This takes a little while to set, but there is no need to boil or freeze anything. Agar agar will set at room temp or in the fridge. It does not change the taste or texture, and it is vegan.
