Guest guest Posted June 12, 2008 Report Share Posted June 12, 2008 Creole Mushrooms 1/4 cup red wine 2 garlic cloves, minced 1 teaspoon oregano 1 medium onion, diced 1 green bell pepper, diced 1 jalapeno pepper, chopped 1 medium tomato, diced 1/2 pound whole button mushrooms 1 tablespoon tomato paste Simmer the garlic, oregano and onion in the wine for 5 minutes. Add diced bell pepper and the jalapeno pepper. Cook, stirring frequently, for 2 minutes. Add tomatoes and cook for another 5 minutes. Finally add the mushrooms and the tomato paste.
