Mock Salmon Loaf

 

1 qt tomatoes

4 T. Peanut Butter

2 C. Yellow Cornmeal

1 onion, cut into pieces

2 garlic cloves

1 T. Vegetable Salt(I used Lawry's seasoned salt)

1/2 t. cayene pepper, ground(optional)

 

Put everything into a blender(I used a Vita-Mix)and blend until creamy,

about 2 minutes.

 

Pour into a sprayed casserole dish or cast iron skillet and bake

uncovered for 45 minutes at 350 F.

 

Slice and enjoy as is. Also great put on a hearty pieces of whole

wheat bread spread with Veganaise or Mayo. Good in Pita bread with

some shredded lettuce and tomatoes with veganaise. Put some in a

lettuce leaf wrap the lettuce around it for a quick sandwich wrap.

 

This is great spread on crackers or use it as a dip with hard veggie

sticks.

We had this tonight for dinner with some steam fried garlicy collard greens,

field peas with snaps, and a tossed salad......... Oh it was all so good.
