Not very healthy, but a nice treat once in a while. Potato Cheese " Pie " mashed potatoes, homemade or instant, enough for the number of servings you are planning to make, seasoned to your liking grated cheese of your choice Make mashed potatoes. Make sure they have a thick consistency. Put in a round, microwave-safe dishand microwave until cheese has melted. Add more seasaoning if desired. Enjoy!
