Guest guest Posted March 31, 2008 Report Share Posted March 31, 2008 I have this one (below) in my files -- it sounds close, but that maybe you had one that was vegan-ized. -Shari Sean's Mock Tuna Salad Serves: 8 Hands-OnTime: 15 Minutes Total Time: 15 Minutes 2 (15 ounce) cans BUSH'S BEST Garbanzo Beans, drained, rinsed, and slightly mashed 4 stalks celery, chopped 1 small onion, finely chopped 2 cloves garlic, minced 2 teaspoons lemon juice 2 teaspoons lime juice 1/2 cup mayonnaise 1 1/2 tablespoons wasabi paste 1 1/2 tablespoons prepared horseradish salt and pepper to taste 1 cup dry bread crumbs, or as needed In a large bowl, mix the beans, celery, onion, and garlic. In a small bowl, blend the lemon juice, lime juice, mayonnaise, and wasabi paste. Season with salt and pepper. Gradually mix in bread crumbs as needed to attain desired consistency.
