Guest guest Posted June 7, 2007 Report Share Posted June 7, 2007 Ingredients: 1/3 cup slivered almonds 1-1/4 cups unbleached flour 1/2 cups sugar 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 egg 1 egg white 1 teaspoon vanilla 1/2 teaspoon almond extract 1 tablespoon instant coffee powder 1 tablespoon water 1 ounce unsweetened chocolate, melted Instructions: Spread the almonds on a baking sheet and toast at 350 degree's for 8 to 10 minutes, or until lightly toasted. Set aside. In a large bowl, stir together the flour,sugar,baking powder,baking soda and salt. In a small bowl, whisk together the egg, egg white, vanilla and almond extract. In a cup, combine the coffee and the water. Add the coffee mixture and chocolate to the egg mixture. Add to the dry ingredients and mix just until incorporated. Stir in the almonds. Coat an 11 " x7 " x or a 9 " x9 " baking pan with nonstick cooking spray.Press the dough into the prepared pan. Bake at 350 degree's for 25 minutes, or until firm. Immediately cut into 30 fingers.
