Guest guest Posted June 20, 2006 Report Share Posted June 20, 2006 Spicy Slow Cooker Black Bean Dip2 (15 ounce) cans black beans, drained1 (10 ounce) can Rotel tomatoes, in sauce, any flavor2 chipotle chiles in adobo, finely chopped1 tablespoon adobo sauce3 tablespoons finely chopped onions1/2 teaspoon dried oregano2 tablespoons chopped fresh cilantro2 garlic cloves, minced1 lime, juice of1/2 cup grated jack cheese(or cheese of your choice)Mix together the first 9 ingredients in a slow cooker. Cover and cook onHIGH for 1 hou or low for 2 hrs.Gently mash the beans along the side of the crockery. Sprinkle withcheese, cover, and cook for 30 more minutes.Serve with tortilla chips.
