I think this would be good if you omit the meat. 6 slices of bacon cooked and crumbled 1 onion chopped 1 can diced tomato (regular size) 1 envelope taco seasoning 1-1/2 cups rice (not instant, we like long grain) water Cook and crumble the bacon, set aside (or use ground beef). In a large, deep skillet or wok saute the onion for a few minutes in 2 tablespoons bacon grease or oil. Add rice and saute for a few minutes. Drain the liquid from the tomatoes into a measuring cup and add enough water to equal 3 cups. Add water, diced tomatoes, taco seasoning and bacon to pan. Cover, reduce heat and cook about 15-20 minutes (you may have to stir at least once while it is cooking) Let stand, covered until all liquid is absorbed. You could add whatever you like, green pepper, black olives, etc. I will definately make again both meatless as a side dish or with ground beef or turkey.
