Guest guest Posted August 22, 2004 Report Share Posted August 22, 2004 I had a cinnamon candle burning this morning, and it set up a craving for cinnamon rolls. This is my standard recipe – always turns out well, and very little work because the bread machine does all the kneading, etc. You can, of course, prepare it by hand, if you want to do the extra work. Cinnamon Rolls 1 cup skim milk 1 large egg 4 tbsp butter 2 1/3 cups bread flour 1 cup whole wheat flour (you can play with the ratio of bread : whole wheat flour to suit your tastes) 3 tbsp sugar ½ tsp salt 1 pkg active dry yeast (2 – 2 ¼ tsp) Filling: ¼ cup butter ¼ cup sugar 3 tbsp ground cinnamon ½ tsp nutmeg ½ cup chopped walnuts (or a combination of raisins and nuts) Icing: 1 cup powdered sugar 1 – 2 tbsp milk ½ tsp vanilla Add ingredients to bread machine as recommended by manufacturer and program for the dough cycle. When cycle is done place dough on floured surface and knead for about 1 minute. Let rest, covered, for about 15 minutes. Roll dough into a rectangle, about 15” x 10”. Spread butter over dough to within 1 inch of edges. Sprinkle evenly with sugar, cinnamon, nutmeg and nuts. Roll the dough up tightly on the long side, pressing the edges to seal. This whould form about a 12” long even roll. Cut roll into 1” slices and place cut side down into a greased 13 x 9 baking pan. Cover and let rise in a warm place until doubled in sice (about 30 – 45 minutes). Bake at 375F for 20 – 25 minutes or until golden brown. Cool in pan for about 10 minutes. While the rolls are cooling, combine powdered sugar, milk and vanilla, stirring until smooth. Adjust amounts to get a spreadable consistency.
