Guest guest Posted August 21, 2004 Report Share Posted August 21, 2004 I had a couple of really ripe bananas sitting around; I don’t like to eat them like that, so I went searching for a recipe to use them. I love banana bread/muffins, and the addition of oatmeal for some texture sounded good. It was! These muffins turned out delicious. Banana Nut Muffins 1 cup flour ½ cup sugar 1 ½ tsp baking powder ½ tsp salt ¼ tsp baking soda ¾ cup oatmeal (quick or regular) 1 egg, beaten 3 tbsp vegetable oil ½ cup milk ½ cup bananas, mashed (I used 2) ½ cup nuts, chopped (I used about ¾ cup chopped walnuts) Mix flour, sugar, baking powder, salt and baking soda. Stir in oatmeal. Add remaining ingredients. Stir only until moistened. Fill medium size greased muffin cups 2/3 full (I didn’t grease them because I use no-stick tins). Bake at 400F for about 20 minutes. These had great flavour and the addition of the oatmeal gave them wonderful texture as well.
