Been there, done that :=( I was amazed that a senior relative on learning some years ago about my vegetarianism worried about my getting enough protein, iron, etc. It took a little talking to try to explain (as you have done). So much easier and healthier to eat now ;=) About health vs moral grounds for vegetarianism: these get mixed up a lot, I think. Ya can start up feeling one way and end up feeling another or both. I'm not sure it matters to the animals whether we don't eat them because we consider their meat unclean, unhealthy, unattractive or unappetising or because we think eating flesh is unethical. Actually, I doubt they give it much thought ;=) And I don't care myself why someone is vegetarian. A vegetarian is someone who doesn't eat meat. Period. Benefits accrue. Me? Oh I recognize the health benefits, I truly do, but I am vegetarian for philosophical reasons. It works for me ;=) As for brown rice (while I'm on a roll here): I have been avoiding white grains for some time, but lately a little white rice and white bread has come back into my life and I must say it tastes just fine - different, not as strong, not as nutty, but fine and perhaps even better for some things. Variety is good. I won't suffer from malnutrition for having white basmati with my curry once in a while ;=) Which reminds me to look to the tofu I'm marinating for my luncheon creation - whatever it turns out to be.
