I enjoyed the meal that came out of that, so thought I'd share. I took 1 really big tomato (a couple plum tomatoes would work great) and cut it into ~1 in. pieces, a block of tofu cut into about 3/4 in. pieces, and a handful of sliced baby bella mushrooms. Drizzled olive oil over the tomato etc., while I chopped/sauteed several cloves of garlic, then added the tomato, tofu, and mushrooms to the skillet. Seasoned with chopped basil and parsley and salt and pepper. Very generous w/the olive oil. Zucchini would have been great, and maybe some slivered/chopped nuts. My brother thought melted cheese would have been a nice addition, but as is was yummy. I had it with rice, and it was more filling than I expected. Zucchini, as you suggest, works fine in something like that - it's good with noodles, penne for example, as well as rice. Cheese? Maybe a little goat cheese crumbled in at the end before the last stir around? Tastes very different then, of course, so although it looks about the same I think it's a whole different dish ;=) Nuts you say? Pine nuts? How about pistachios or or or or . . . .
