Chevre recipes?

I was shopping yesterday and couldn’t resist the chevre that was on

sale. Now I’m at a loss as to what to do with it. I’ve never cooked

with it before, but I’ve always loved things others have made that

included it. So, what do YOU do with chevre? Got a favourite recipe

you’d like to share?

I use it in soups like parsley or sprinkle it dried on top of white rice.

the other night i made corn stuffed poblanos and

topped it with crumbled goat cheese. they were really

good.

i roasted the poblanos, skinned them, and removed the

seeds through a slit in the peppers.

meanwhile i sauteed onions, garlic, jalapenos in a bit

of oil. i added fresh corn and chopped zucchini and

cooked until the zucchini was tender. i threw in a

handfull of chopped cilantro and seasoned with salt

and pepper.

i stuffed the corn mixture in the poblanos and

crumbled the goat cheese on top.

 

i use chevre alot. i put it in sandwiches, on salads

(i love it with balsamic vinaigrette), in veggie

wraps, on beans, on nachos, stuffed it in jalapenos.

i've made sauces for enchiladas with it and sauces for

homemade ravioli too. i've also wrapped goat cheese

around grapes and then rolled in chopped

pecans...great appetizer for a party. one time i made

goat cheese fritters and served them with capanata (a

mixture of eggplant, garlic, tomatoes, capers, bell

peppers, olives and onions). they were good.

 

anyway, hope this gives you a few ideas. :)

I use it regularly in salads (had one today – spinach, crumbled goat

cheese, dried cranberries and slivered almonds with a balsamic

vinegarette. YUMMM) and on sandwiches, but I’ve never actually *cooked*

with it. These ideas give me lots to work with.
