RECIPE Black Bean Salad

This simple dish is one of my favorite things to eat.

 

Ingredients:

 

One can black beans, drained and rinsed.

One medium tomato, chopped.

Three or four green onions, chopped.

1/4 a large avocado, cubed.

Sprinkle of cheddar or jack cheese.

Garlic powder (to taste)

Cumin (to taste)

Salt (to taste)

Tortilla chips (I like baked.)

 

Mix the garlic powder and cumin into the beans. Heat the beans in the microwave

until hot, and sprinkle with cheese. Stir well. Top with tomatoes, avocado,

and green onions, and salt to taste. Scoop up with chips or eat with a fork.

Serves 2-3.

 

I especially like this because I can chop up the vegetables and spice the beans

beforehand, and then heat up a meal in minutes.
