If not, what would or is there a substitute that I would be able to use ???? What I'm trying to make is a filling for a tart that asks for eggs in the filling recipe, but, I don't want to use eggs. Guest guest Posted August 7, 2004 Report Share Posted August 7, 2004 Without seeing the recipe for myself it is hard to say. i have also never used soft tofu for an egg replacer before but perhaps others here have and could advise you there.. i have a recipe in the files section for a homemade version of the boxed egg replacer called Ener-G. It is shared in the files in the 'Master Mixes' folder but let me repost it here: I saw this recipe posted on another vegetarian cooking site. It looks very useful for those who are trying to avoid eggs in their baking but would rather make their own egg replacement due to the cost of commercial brands. Ener-G Type Egg Replacer 1 cup potato starch 3/4 cup tapioca flour 2 tsps baking powder Mix all well. Store in airtight container. To use: 1 & 1/2 tsp powder + 2 Tbs water = 1 egg. 1 & 1/2 tsp powder + 1 Tbs water = 1 egg yolk. When measuring, press powder firmly into measuring spoon. Also in our files section under 'Kitchen Tips' there is a sub folder with egg replacement ideas that are according to the different uses of the egg in a recipe; things i have tried that worked best for me and ideas shared by others: /files Hope this helps!
