Guest guest Posted August 2, 2004 Report Share Posted August 2, 2004 Soup is an artform; I never really follow a recipe or measure anything, so don’t follow this “recipe” to a T. You know what you like better than I do. Lentil Soup 2 medium carrots, diced 2 small potatoes, diced 2 stalks celery, diced 4 cloved garlic, minced 1 cup lentils ½ cup brown rice 1 tbsp Italian seasoning 2 bay leaves 6 – 8 cups vegetable stock 1 tsp olive oil Lightly sautee the garlic, carrots, celery and potato in the oil. Pour in the stock. Stir in the lentils and rice. Add the seasonings (salt and pepper to taste), and let simmer until the lentils and rice are tender. You may need to add water/stock if it gets too thick.
