[RECIPE] Hearty Lentil-Rice Casserole

Made this for the first time the other day. Delicious, and takes

less than 15 minutes to throw together, though next time I make it,

I think I will bake it longer as my lentils were still a little bit

crunchy.

 

Hearty Lentil-Rice Casserole

 

3 cups of vegetable broth

3/4 cups of dry lentils

1/2 cup of brown rice

3/4 cups of chopped onion

1/2 teaspoon of sweet basil

1/4 teaspoon of oregano

1/4 teaspoon of thyme

1 clove of crushed garlic

1 cup of shredded cheddar cheese (optional)

sour cream (optional)

 

Blend all ingredients in casserole dish. Bake uncovered for one hour

and 30 minutes in a 325-degree oven. Remove from oven after one hour

and 15 minutes to top with cheese; replace and cook until time is up

or cheese is browned on top. Serve topped with sour cream. Vegans

will want to omit the optional cheese and sour cream or use soy-

based substitutes. Serves 3-4.
