Delicious, and takes less than 15 minutes to throw together, though next time I make it, I think I will bake it longer as my lentils were still a little bit crunchy. Hearty Lentil-Rice Casserole 3 cups of vegetable broth 3/4 cups of dry lentils 1/2 cup of brown rice 3/4 cups of chopped onion 1/2 teaspoon of sweet basil 1/4 teaspoon of oregano 1/4 teaspoon of thyme 1 clove of crushed garlic 1 cup of shredded cheddar cheese (optional) sour cream (optional) Blend all ingredients in casserole dish. Bake uncovered for one hour and 30 minutes in a 325-degree oven. Remove from oven after one hour and 15 minutes to top with cheese; replace and cook until time is up or cheese is browned on top.
