One thing that I’ve noticed is that the temperature of the room where you’re using it makes a big difference in how well it freezes. My kitchen is air conditioned, and I have no problems getting my ice creams, sorbets, frozen drinks, etc to freeze, but a few weeks ago I tried to make frozen margaritas at a friends house and they simply would not freeze. Her house isn’t air conditioned and it was sticky hot out. The freezer bowls simply melted much too quickly to freeze the drinks. My cuisinart came with two freezer bowls, which is great. I keep them both in the freezer, then when I want to use a generic base but make two different flavours of ice cream or sorbet, I don’t have to wait 24 hours for the bowl to freeze again. I’m still looking for the perfect recipe for pink grapefruit sorbet, so if anyone has one, please post it! -- Sherri In everyone's life, at some time, our inner fire goes out. I wouldn't have it any other way.) So I'm not sure that was the problem. Maybe my freezer isn't as cold and requires the extra time. Who knows. I'm going to use the watermelon sorbet recipe for the honeydew I brought home today. I'm waiting for the pears on my pear tree to ripen so I can try that as well. I also brought a mint plant home today with visions of mint ice cream with crumbled up Newman's Own " oreos " in it. I'm am so going to get fat. Guest guest Posted August 1, 2004 Report Share Posted August 1, 2004 Pink Grapefruit Sorbet (serves six) 1 1/2 cups sugar 1 3/4 cups water 1 tbs. grated grapefruit zest 1 1/4 cups freshly squeezed pink grapefruit juice 1/4 cup lemon juice 1 egg white Combine sugar, grapefruit zest and water in a medium sauce pan and bring to a boil. Remove from the heat when the sugar has dissolved. Add the pink grapefruit juice and lemon juice. Transfer sorbet mix to a storage container and refrigerate for six hours. Add lightly beaten egg white to mixture and combine thoroughly. Freeze sorbet mixture in a ice cream maker according to manufacturer's instructions.
