Guest guest Posted July 29, 2004 Report Share Posted July 29, 2004 i served this with a pasta in a parma rosa sauce, but my dh thought this would have been nice served as the main dish over brown rice; i think i agree with that idea. How ever you would decide to fix this, it is delicious, easy and fast to prepare. i used quite small organic zucchini in this and would have used fresh mushrooms had i any in the pantry. Zucchini and Mushrooms in Sauce 1 onion, sliced into rings 1 Tbs. olive oil 3 cloves of garlic, minced 3 small zucchini, halved and sliced in half moons 1 small can mushrooms, drained ( 4 oz.) 1 can tomato sauce (8 oz.) 1/2 tsp. dried basil 1/2 tsp. Italian seasoning 2 tsp. turbinado sugar In a wok, saute the onion in the olive oil until it starts to soften. Add the garlic, zucchini, and mushrooms, cook for another 2 minutes. Stir in the remaining ingredients and lower heat to a simmer. Continue to cook until vegetables are tender and sauce begins to thicken.
