Guest guest Posted July 26, 2004 Report Share Posted July 26, 2004 pt, in the appetizers department, don't forget hummus and baba ghanouj. if you don't have pita bread handy for toasted wedges, you can use fritos :-D i also prefer metric measurements, they're easier to work with and locate on the other side on most measuring cups or in fine print on spoons, but a tbsp is about 15 ml and a tsp maybe 5ish. HUMMUS (delicious Middle Eastern dip) my proportions, feel free to experiment. 125 ml lemon juice (I like it a little tart) 75 ml water (can use liquid from chickpea cans) 125 ml tahini (sesame puree, health food store) 4 cloves garlic (5 ml powder) 2 cans cooked chickpeas (garbanzos, maybe 800 ml each?) 2 ml ground coriander (a.k.a. cilantro; optional but good) 1.5 ml cumin (ditto) 20 ml olive oil Salt and pepper to taste, maybe 12 and 1 ml or so, I forget) Puree first 4 ingredients in a blender till smooth. Add remaining ingredients and puree till smooth. Like many things, tastes better after it's had a few hours to sit and blend in a fridge.
