I wanted to share my yummy dinner with you guys It's a recipe I have revamped from a cookbook like forever and a day ago...don't even remember which one! Itallian Pasta Bake 2 c. Whole wheat penne 1 can diced tomatos with basil, garlic and oregano 1/2 c. broccoli (cut into smallish pieces) 1/2 small zuccini chopped 1/2 small yellow squash chopped 1/4 c. grated carrot 1/4 c. chopped mushrooms Bread crumbs to top (usually around 2 T.) 2 c. Soy Cheese - mozzerella flavor (or just cheese if you eat it) Preheat oven to 350 Cook Pasta according to package directions Steam broccoli, squash, zuccini, mushrooms 5 min. When done - mix them together into a med. casserole dish, stir in carrots, 1 c. cheese and tomatos. Top with last cup of cheese and then bread crumbs Cook until bread crumbs are toasty and cheese is melted (around 20 min.) I usually serve this with garlic toast and a mixed greens salad with cherry tomatos, cucumbers, some grated carrot, and balsamic vinnegrette dressing. It's a family favorite.
