KATHY'S SQUASH CASSEROLE

 

1 TO 2 SMALL TO MEDIUM ZUCHINNI SQUASH

1 MEDIUM YELLOW SUMMER SQUASH

6 TOMATOES / FRESH

1 CUP SHARP GRATED CHEDDAR CHEESE

ABOUT 1/3 BAG SEASONED STUFFING CRUMBS/CUBES, 2-3 CUPS

1 CAN UN-CHICKEN STOCK / VEGETABLE CAN BE USED

1/2 CUP CHOPPED CELERY

1/2 CUP CHOPPED ONION

1/2 CUP CHOPPED GREEN PEPPER

 

SAUTE THE CELERY, ONION AND GREEN PEPPER IN A LITTLE OLIVE OIL TILL

ALMOST DONE. PEEL SQUASH, AND TAKE OUT BIG SEEDS AND CUT INTO

CHUNKS.

 

CORE TOMATOES AND CUT INTO BITE SITE CHUNKS. IN AN OILED CASSEROLE

DISH, MIX THE SQUASH, TOMATOES & SAUTEED VEGGIES. MIX IN THE

STUFFING CUBES ADD 2/3 OF THE CHEDDAR CHEESE AND TOSS WELL. POUR THE

VEGGIE STOCK OVER THE ENTIRE CASSEROLE. BAKE ABOUT 30 MINUTES OR SO

TILL BUBBLY, THEN ADD THE REMAINING CHEESE ON TOP AND BAKE TILL THAT

CHEESE IS MELTED.

 

NOTE: IF IT SEEMS TOO SOUPY ADD A LITTLE EXTRA BREAD CRUMBS
