PEEL SQUASH, AND TAKE OUT BIG SEEDS AND CUT INTO CHUNKS. CORE TOMATOES AND CUT INTO BITE SITE CHUNKS. IN AN OILED CASSEROLE DISH, MIX THE SQUASH, TOMATOES & SAUTEED VEGGIES. MIX IN THE STUFFING CUBES ADD 2/3 OF THE CHEDDAR CHEESE AND TOSS WELL. POUR THE VEGGIE STOCK OVER THE ENTIRE CASSEROLE. BAKE ABOUT 30 MINUTES OR SO TILL BUBBLY, THEN ADD THE REMAINING CHEESE ON TOP AND BAKE TILL THAT CHEESE IS MELTED.
