We eat them in sandwiches, (some low-fat mayo, romain lettuce, a slice of onion, and a sprinkle of fresh ground black pepper), and also diced in salads, or just alone on the plate with other things like a veggie and some taters. Also, Morningstar Farms's new Italian Marinara Chik'n is quite good, too. Serve one of those, (it's a breaded cutlet with separately-heated marinara sauce you pour over it), on a bed of noodles and you've got a nice meal.
